Protein Pumpkin Spice Pancakes
Ingredients:
2 tbs. Coconut Flour (I used Bob Red Mill)
1/2 scoop Vanilla Protein Powder
2 Egg Whites
1/4 cup Pumpkin Puree
1/4-1/3 cup Almond Milk (Or until desired consistency)
1 tsp. Pumpkin Spice Seasoning
1/2-1 tsp Stevia
1 tbs Natural Almond Butter (Optional)
Directions:
1. Mix together flour, protein powder, pumpkin spice, and stevia
2.Add egg whites, pumpkin, and almond milk
3. Mix thoroughly
4.Spray a pan with nonstick spray and spoon batter onto pan (I usually make about 3-4 pancakes)
5. Cook for 3-5 minutes over medium or medium-low heat (depending on your stove), then flip
6. Cook for another 2-3 minutes, or until golden on each side
7. While pancakes cook, spoon 1 tbs almond butter into microwave safe bowl
8.Add a splash of water and microwave for 15-20 seconds
9.Stir well and top pancakes with melted almond butter
10. Devour!

Calories- 270, Protein: 22g, Carbs: 18g, Fat: 12g
